Commercial electrical
A commercial kitchen concentrates more load into fewer square feet than almost anything else, and it does it in a wet environment with equipment that arrives after the wiring was designed. Both of those are foreseeable.
Load
A kitchen fit-out is not a gradual accumulation of load. Everything lands within two weeks and it all wants dedicated circuits, so the distribution has to be designed against the actual equipment schedule rather than a floor area rule of thumb.
That is why we ask for the equipment list before designing rather than after. Nameplate ratings, whether items are three phase, and which ones run continuously all change the answer, and finding out at install is how a board ends up full on day one. A subpanel is the usual retrofit when that happens.
Where the incoming supply cannot carry the finished schedule, that is a supply conversation with its own timescale, and it is far better raised at the design stage. Tenant fit out covers how that fits into a wider fit-out program, and a service upgrade sets out what changing the supply involves.

Water and cleaning
Kitchens get washed down. That changes what protection is appropriate, where devices can sit, and what enclosures are acceptable, and it is the difference between an installation that lasts and one that starts tripping in its second year.
Ground fault protection is the obvious part. Less obvious is placement: a device that is technically compliant but sits where a hose reaches it will fail eventually, and the fault it produces looks like a mystery until somebody watches the cleaning routine. Extraction and refrigeration are the two loads that must not be interrupted, so they get separated deliberately from anything that might trip. Losing a fridge overnight is a stock loss rather than an inconvenience, which is why surge protection is worth considering on those circuits.
Work in an operating kitchen is scheduled around service rather than through it, on the same basis as retail electrical, and out-of-hours is usually the honest answer.
